Cheesy Southern Corn Casserole

This beloved dish, often called "Cornbread Casserole" or "Corn Pudding," is a staple at Southern potlucks and holiday dinners for a reason—it's incredibly easy to make and always a crowd-pleaser.

Ingredients

  • 1 can (15 ounces) whole kernel corn, drained

  • 1 can (15 ounces) creamed corn

  • 1 cup sour cream

  • ½ cup (1 stick) unsalted butter, melted

  • 1 package (8.5 ounces) cornbread mix (e.g., Jiffy)

  • 1 ½ cups shredded cheddar cheese, divided

  • ¼ cup chopped fresh chives or green onions

  • ½ teaspoon salt (or to taste)

  • ¼ teaspoon black pepper


Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C). Grease a 2-quart or 9x9-inch baking dish with butter or non-stick spray.

  2. Combine Wet Ingredients: In a large mixing bowl, stir together the drained whole kernel corn, creamed corn, sour cream, and melted butter until well combined.

  3. Add Dry Ingredients: Add the entire box of cornbread mix, 1 cup of the shredded cheddar cheese, chopped chives, salt, and pepper. Stir until just combined and no dry streaks of cornbread mix remain. Be careful not to overmix.

  4. Bake: Pour the batter into the prepared baking dish and spread it evenly. Bake in the preheated oven for 40 minutes.

  5. Add Remaining Cheese: Carefully remove the casserole from the oven. Sprinkle the remaining ½ cup of cheddar cheese evenly over the top.

  6. Finish Baking: Return the casserole to the oven and bake for an additional 5-10 minutes, or until the cheese is completely melted and bubbly, and the center is set. The top should be a light golden brown.

  7. Rest and Serve: Let the casserole rest for 10 minutes before serving. This allows it to set fully, making it easier to slice and serve.
