Instructions
Make the Crust:

In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand and holds together when pressed.

Press the mixture firmly and evenly into the bottom and slightly up the sides of a 9-inch pie plate or springform pan.

Place the crust in the refrigerator to set while you prepare the filling.
Make the Filling:

In a large bowl, use an electric hand mixer or stand mixer to beat the softened cream cheese until it is completely smooth and free of lumps.

Add the powdered sugar and vanilla extract. Beat again on medium speed until the mixture is smooth and well combined. Scrape down the sides of the bowl as needed.

In a separate, clean, cold bowl, beat the heavy whipping cream on medium-high speed until stiff peaks form.

Gently fold the whipped cream into the cream cheese mixture in two or three additions. Use a spatula and a light hand to combine until no white streaks remain, being careful not to deflate the whipped cream.
Assemble the Cheesecake:

Remove the chilled crust from the refrigerator.

Spoon the filling into the crust and spread it into an even layer.

Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow it to set completely.
To Serve:

Just before serving, spread the cherry pie filling evenly over the top of the chilled cheesecake.
