5-Minute Healthy Blender Oat Pancakes
These pancakes are incredibly easy, fluffy, and packed with the wholesome goodness of oats. They come together in a blender for a smooth batter and a quick cleanup!

Ingredients

220 g rolled oats (also called old-fashioned oats)

250 ml (1 cup) warm milk

250 ml (1 cup) water

4 large eggs

50 g butter, melted (plus more for the pan)

1 tablespoon vanilla extract or vanillin

3 g (approx. ½ teaspoon) salt

Blend the Batter: In a high-speed blender, combine the rolled oats, warm milk, water, eggs, melted butter, vanilla, and salt. Blend on high for 1-2 minutes, or until the mixture is completely smooth. Let the batter rest for 2-3 minutes while you heat your pan. This allows the oats to absorb the liquid slightly.

Heat the Pan: Place a non-stick skillet or griddle over medium heat. Lightly grease it with a small amount of butter or neutral oil.

Cook the Pancakes: Pour about ¼ cup of batter onto the hot skillet for each pancake. Cook for 2-3 minutes, until you see bubbles forming on the surface and the edges look set.

Flip and Finish: Carefully flip the pancakes and cook for another 1-2 minutes on the other side, until golden brown and cooked through.
