These scones are packed with savory flavors and have a delightful texture from the nut meals and vegetables. They are the perfect sophisticated sidekick to a bowl of soup or a stand-alone snack.

Ingredients

For the Vegetable & Herb Mix:

  • 1/3 large onion, roughly diced

  • 2 stalks celery, sliced

  • 2 carrots, sliced

  • 1 teaspoon fresh sage leaves, minced (or ¼ tsp dried)

  • ½ teaspoon salt

  • ½ teaspoon black pepper

For the Dough:

  • 4 cups gluten-free flour mix (see note below for ratio)

    • *2 parts coconut flour = ~ ⅗ cup*

    • *3 parts almond flour = ~ 1 cup*

    • *8 parts tapioca flour = ~ 2 ⅖ cups*

  • 2 cups cashew meal

  • 1 ½ tablespoons baking soda

  • 2 teaspoons kosher salt

  • 3 tablespoons melted butter or olive oil

  • 5 large eggs

  • 1 ½ cups broth (chicken or vegetable)
