Ingredients

  • 1 pound ground beef (80/20 works well)

  • 1 tablespoon olive oil

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 3 cups yellow potatoes, diced (½-inch cubes)

  • 4 cups chicken broth

  • 2 cups milk (whole or 2%)

  • 2 cups shredded cheddar cheese

  • 1 cup heavy cream

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon dried parsley

  • 1 teaspoon paprika

  • Salt and pepper to taste

Optional Toppings:

  • Crispy cooked and crumbled bacon

  • Diced dill pickles

  • Diced tomatoes

  • Sliced green onions


Instructions

  1. Brown the Beef: In a large pot or Dutch oven, heat olive oil over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain off excess fat.

  2. Sauté Aromatics: Add diced onion to the pot with the beef and cook for 4-5 minutes until softened. Add minced garlic and cook for 1 more minute until fragrant.

  3. Add Potatoes and Broth: Stir in diced potatoes and chicken broth. Bring to a boil, then reduce heat to medium-low and simmer for 12-15 minutes, or until potatoes are fork-tender.

  4. Create Cream Base: Pour in milk, heavy cream, Worcestershire sauce, dried parsley, and paprika. Season with salt and pepper to taste. Heat through but do not boil.

  5. Add Cheese: Reduce heat to low. Gradually stir in shredded cheddar cheese until completely melted and smooth.

  6. Final Simmer: Let the soup simmer gently for 5-10 minutes to allow flavors to meld. Adjust seasoning if needed.

  7. Serve: Ladle into bowls and garnish with your favorite burger toppings like crumbled bacon, diced pickles, tomatoes, or green onions.
