This from-scratch cake uses a reduced strawberry puree in the batter, which gives it an incredible, natural strawberry flavor and a beautiful pink hue that you just can't get from a box mix.

Ingredients

For the Strawberry Puree:

  • 1 pound fresh strawberries, hulled and quartered

For the Cake:

  • 1 ½ cups (12 oz. or 3 sticks) unsalted butter, softened

  • 3 cups granulated sugar

  • 6 large egg whites, at room temperature

  • 1 cup milk, at room temperature

  • 3 ½ cups (14 oz.) cake flour, sifted

  • 4 teaspoons baking powder

  • ½ teaspoon salt

  • ½ cup of the reduced strawberry puree (from the 1 pound of berries)

For the Glaze:

  • ¼ cup of the reduced strawberry puree (reserved from above)

  • 1 cup powdered sugar, sifted

  • 1-2 teaspoons milk or water, if needed
