Step by step preparation
Wash and grate the courgettes with a grater with large holes.
Squeeze them well with your hands or a tea towel to remove excess water.
Place the courgettes in a bowl, add the eggs, cheese, breadcrumbs, garlic, parsley, salt and pepper.
Mix until the mixture is firm but soft. If it is too wet, add a little more breadcrumbs.
With lightly greased hands, form the meatballs and roll them in breadcrumbs for a crispy crust.
Baking : place the meatballs on a baking tray with baking paper, drizzle with oil and cook at 200°C for 20-25 minutes, turning them halfway through cooking.
Or in a pan : fry them in a little hot oil until golden on all sides.
Tasty variations
Add mozzarella cubes inside for a stringy heart.
Replace the parmesan with pecorino for a stronger flavor.
Add fresh mint or curry to the mixture for an aromatic touch.
