Dad-in-law always wants this when he’s here – he can’t get enough!

  1. Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish with olive oil or cooking spray.
  2. Cook the Sausage: In a large skillet over medium heat, cook the sausage slices until they’re nicely browned. Once done, remove them from the skillet and set aside.
  3. Prepare the Potatoes: In the same skillet, add the chopped potatoes and cook for about 10 minutes, or until they start to soften. Add a touch more oil if needed.
  4. Add Aromatics: To the potatoes, add the diced onion and minced garlic. Continue to cook for another 3-5 minutes until the onion is translucent.
  5. Combine Ingredients: Transfer the cooked potatoes, onions, and sausage into the prepared baking dish. Gently mix in the asparagus.
  6. Season and Pour: Pour the chicken or vegetable broth evenly over the mixture in the baking dish. Sprinkle the dried thyme, salt, and pepper.
  7. Bake: Cover the dish with aluminum foil and bake in the preheated oven for about 20 minutes.
  8. Add Cheese: Remove the foil, sprinkle the shredded cheddar cheese over the top, and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
  9. Serve and Enjoy: Let the casserole rest for a few minutes before garnishing with fresh parsley. Serve warm and relish the abundance of flavors!
